Spring Thinking

Spring thinking
Since I am getting excited about my new pants that are now in the mail on their way to me, I thought I would do a little outfit planning. Here are some of the ideas I have to pair with my new capris from old navy!

What girl doesn't love online shopping? Even though it gets me in trouble sometimes, I am addicted. I have an old navy credit card, and yes if you would like to know, they are extremely dangerous. Mine went on a little spending spree today, but I applied an excellent 40% off coupon to my order. This allowed me to get two pairs of pants for the price of one (gotta love a good coupon)! 

Since I am a teacher I am in serious need of some spring outfits that are business casual for school. I went online in search of some new capris and I came across this beauties, let's just hope they fit my funky shape. 



I can't wait for the dear old post man to deliver these to my door so I can try them on!

It's dinner time again...

Kraft has done it again folks! If you have read any of my recent posts I have been obsessing over Kraft's recipe maker boxes. Tonight I tried a new one for dinner. It was a rave review from the roomies! Tonight's pick was Verde Chicken Enchiladas, and boy oh boy were they good. I couldn't stop making "mmm" noises and all I could think about was going back for seconds. (be proud, I refrained.) So here is a walk through like I did for the BBQ to show you just how easy it was to make this delicious meal. 



What you will need:
-pound and a half of boneless skinless chicken breasts
-tortillas (it calls for 12 but I used 10 large)
-Kraft shredded mexican cheddar cheese

What's next: (check the back of the box!)
1. Cook and shred the chicken. I threw mine on my George Forman grill for a bit and then shredded pretty easily with two forks. 
2. Take out the Creamy Ranchero Filling Sauce and mix this liquid gold into the freshly shredded chicken (woah buddy, this stuff is awesome!) 


3. Take out a 9x13 inch pan and spray it with some cooking spray (just in case)
4. Time to break out your tortillas and cover them with a damp paper towels and pop those bad boys in the microwave for about 45 seconds. 
5. While the tortillas are in the microwave take out the first pack of Tomatillo Finishing Sauce and pour it into the bottom of your pan, pick it up and "swish" it around to make it cover the bottom of the pan.


6. Take your tortillas out of the microwave and grab a spoon or fork. 
7. Fill each of your warm tortillas with some of the shredded chicken and roll up. 
8. Place each of the rolled enchiladas seam down in the pan, continue till all are filled and rolled.
9. Take out the second pack of the Tomatillo Finishing Sauce and pour it over the top of your rolled enchiladas. 
10. Grab your cheese and put a layer of cheese over the top! 


11. Pop in the oven at 350 degrees for 15-20 minutes (I did 18 and it was perfect)


12. Enjoy another fabulous dinner... you are such a boss!

sarasota lemonade; yes please!

Yesterday one of my roommates and I decided that we wanted to try something new because the weather was perfect for relaxing outside. I told her how I saw a new drink I wanted to try and that was it, off we went to Walmart to round up the ingredients! The nice part about this new concoction is that it is pretty darn simple. So here are the ingredients and a step-by-step so you can enjoy our new drink with us!

What you will need: 
-2 bottles of moscato wine
-1 can of frozen pink lemonade concentrate
-3 cups of sprite (then add to taste)
-1 flat of fresh raspberries


Directions:
1. Add all the liquid ingredients (two bottles of moscato, sprite, and lemonade) into a large pitcher and stir. (picture time, because it is a beautiful pink ombre after this step!)



2. Wash your raspberries and put half into a bowl.  



3. Take a fork and mash up the berries you put in the bowl. 
4. Now, pour in the smashed berries from the bowl and stir. 
5. Last but not least, dump in the whole berries that you set aside.
6. Pour into chilled wine glasses 
7. Go outside and ENJOY! (my roommate and I bottled some up and went to the baseball game!)





**The nice part about this recipe is that is it relatively inexpensive. The most expensive part of the drink was the raspberries and that was because they aren't in season yet.**

A new portal AKA a new book

Ladies ladies ladies...(and gents) I need some suggestions! I am always looking for a new book to sink my teeth into and get lost in it's pages. I am currently working through the Divergent series, but I will soon need your help to find a new book to pick up. Summer is approaching fast and my time to sit in a beach chair and bake into an oblivion is very close, so of course I need some book suggestions to pair with the smell of sunscreen. I hope y'all can help a girl out and comment with some of your favorites below.
